Top 5 Australian Restaurants According To Dubfire

Dishes from Neil Perry's Rockpool

One half of the Grammy-award winning duo Deep Dish in the late ‘90s and early ‘00s, you would be excused to think Dubfire has achieved all that can be achieved as an artist.

However, since the disbandment of Deep Dish in the mid-’00s, Dubfire has forged a career as one of the most respected and in-demand techno acts to grace the planet.

His dark, moody and infectious techno sets has seen him become a techno mainstay, headlining festivals and playing to sold out clubs all over the planet.

Headed to Australia next weekend, Dubfire is a foodie; here, he recounts his five, favourite restaurants.

1. Tetsuya’s Restaurant (Sydney)

The first incredible meal I had in Australia many years ago. My friend Armin van Buuren was also supposed to join me for dinner that night but had a last minute scheduling conflict – so Armin, you missed out buddy! Chef Tetsuya Wakuda’s Japanese/ French fusion is revered around the world and for fans, definitely check out Waku Ghin at the Marina Bay Sands in Singapore.

2. Attica (Melbourne)

I have to confess that I’ve never been here but been dying to! Chef Ben Shewry’s Attica is apparently Australia’s answer to Copenhagen’s Rene Redzepi/ noma and along with Tetsuya’s, is probably the most revered, gastronomic destination in Oz.

3. Sepia Restaurant and Wine Bar (Sydney).

I had never heard of this place until Sven Väth took a group of us there back in March while we were on the FMF tour. Believe it or not I DO go to restaurants I have not researched or never heard of and this one was exceptional. Shame I don’t recall what we had – blame it on the wine pairing!

4. Icebergs Dining Room and Bar Modern (Sydney).

Another one that Sven took a group of us to a few years ago for the first time. It’s obviously quite an established spot based on the location, with gorgeous views of Bondi Beach. The entire menu is delicious but I always come here for the Australian wagyu and wines!

5. Rockpool (Sydney).

I guess Neil Perry is the Wolfgang Puck of Australian gastronomy so nothing groundbreaking here but the food, service, wine selections and especially the Australian wagyu meats are exceptional, so no visit to Oz is complete for me without at least one stop here or their Melbourne location.
