What do you do?
I’m the executive chef at Mighty Mighty Cue & Brew in Brisbane.

Why do you do it?
Cooking has been my passion for most of my adult life. I do it for the thrill of a busy service, for the interesting people you meet and the creative outlet cooking gives.

What do you love about the city you live in?
Brisbane is awesome in that it maintains that small town feel with all the attributes of a big city (cool bars, restaurants etc).

Where did you go for your last holiday?
I went to Texas last November to sample some amazing pit BBQ.

What's your favourite item of clothing? Why?
I have a Shirt I bought in Austin that has a pin up girl on it that seems to be the first shirt I reach for in the wardrobe. Also, very rare to see me without my golf hat.

What was your favourite TV show when you were a kid?
Astro boy.

If you could travel back in time for a day, where would you go?
The cook in me would love to travel back to the 1890s to the Savoy Hotel and experience the kitchen of Auguste Escoffier. Seeing Led Zeppelin play somewhere in the early 1970’s would be awesome.

If we were coming over to your place, what would you cook for us?
Some tasty smoked brisket with an abundance of spicy homemade BBQ sauce and all the trimmings.

What's the best lesson you've ever learned?
Humility. A lesson that has taken many years.

Tell us one thing about yourself that nobody else knows...
No.

Are you happy with your work/ life balance?
NO. But thankfully I have very understanding friends and family who work around my busy work life.

How do you define success?
By how happy I am after a 13 hour shift, knowing it starts all over again in 8 hours.

What's your spirit animal?
Maybe a bear? Don’t know why.
