Gifted visual artist, songwriter and musician Parker recently released her iridescent new single 'Can't Keep Waiting'.


Evocative of Massive Attack and the lyrical and vocal prowess of Lana Del Rey, 'Can't Keep Waiting' is epic and overflows with the power of primal human emotion. "'Can't Keep Waiting' is about gathering the courage to be honest with myself," Parker says.

"It's about letting go of all that is safe and familiar in life in order to evolve and grow. I believe it's in the moments when we feel completely lost that we find the opportunity to discover something new about ourselves.

"Nothing is permanent, everything can change. Each moment we have the ability to create ourselves anew."


Here, Parker takes us on a day trip around Launceston's best eateries and cafes. "Sweet! Easy," exclaimed Parker when the subject was first raised for a Top 5 listicle. Before she added: "Well, not easy 'cause there are too many amazing places to eat. I added some extras."

Princess Square Bar

It's a one-man show run by my friend Damien. It only has three tiny tables, the music playlist is always amazing, the coffee is incredible and the vibe is a perfect way to start your day.

Lots of indoor plants and looks out over Princess Park, so even in the depths of winter you feel like you are in a tropical wonderland.

Off Centre

Next stop, my favourite place to spend a few hours working – bright and light open space, and delightful staff. Choose from their menu of fantastic, locally roasted coffee (Shane is a coffee wizard) and really nice tea selection. Bagels and pastries are incredible and the music is always great.

Bread + Butter

This place is great for both breakfast and lunch. I ate a pastry here every single morning of my two-week art residency at Sawtooth Gallery.  I've travelled a lot and consider myself a connoisseur of pastries. This place is the best in the world. Not exaggerating.

Saigon Kitchen

Only place in town open between 2-6pm. Most incredible authentic Vietnamese street food. I eat here at least once a week.

St John's

Amazing selection of craft beer and wine, and only place you can get food after 9pm. Best burgers in town.

If you love to cook

Saturday morning, Harvest Market is the best place to get all your fresh, local ingredients and try-out all the local food maker stalls and listen to local musicians performing.

Grand Central - fuel station and 24-hour gourmet deli.
