Feisty kitchen duo and reality TV stars Chloe James and Kelly Ramsay will bring the heat to Brisbane, launching an exclusive cooking series hosted by Hotel Jen.
The interactive cooking events, appropriately titled ‘Cooking Up A Storm’, invite food-loving Brisbanites to take a cue from the duo’s nose-to-tail eating philosophy and learn to cook new dishes before sitting down to enjoy a three-course meal.
The hotel’s rooftop sky garden will form an integral part of the classes, allowing guests to physically source their ingredients and further enforcing the sustainable food ethos promoted by the cooks. “When we heard Hotel Jen source most of their produce from a sky garden on their roof we were really impressed,” Kelly says.
“We can’t wait to share our love for nose-to-tail with Brisbane – the city has a great rep for sustainable eating with heaps of impressive community gardens and we are confident our events will be well received by local foodies,” Kelly says.
With the first class starting on Thursday 26 February, Chloe and Kelly have shared their favourite dishes to get your mouth watering.
Crispy Pigs Ears
One thing you will always find in our fridge is pigs ears; we love them, our friends love them, our families love them and most of all our catering customers love them! People may turn their nose up at first, but once you try them you will never look back. Our lucky diners at our Hotel Jen cooking class will get to learn all our secret tricks to making these delicious morsels.Whole Snapper Thai Style
We both love fresh food in summer! This dish is so easy, but amazingly tasty. We love to cook it in the barbeque and then place the whole fish on the table for everyone to help themselves. Perfect summer entertaining!Lamb Shank Pappardelle With Pecorino & Peas
Totally different end of the spectrum but in winter this dish warms your soul. After years and years of making this dish we have it down to a fine art! Total comfort food, best enjoyed with a goblet of red wine and good company.Squid Sliders
We are huge seafood fans, and huge slider fans... what more could you ask for? These little babies are not just our favourite but our catering customers love them too. Tender squid with a chipotle aioli, homemade pickles, cos lettuce all on a brioche bun, yum!Caramel And Pumpkin Pie With Brown Butter & Rosemary Ice-Cream
This dish is us on a plate! We love making desserts with savoury ingredients, and after a bit of trial and error came up with this dish – it’s divine. Everything works together and complements each other; it’s dessert but not overly sweet. In our opinion it’s one of the best ways to finish a meal, and the diners at our next Hotel Jen class will get to learn how to make it... and best of all get to taste it!The ‘Cooking Up A Storm’ events will take place monthly at Hotel Jen and will be limited to 50 people per class.
