There are many names for it – Ta Ra, Sol, Soleil, Araw, Zon, Matahari, Tai-Yang, Aurinko, Sonne, Sole, etc. But the meaning is one: Sun.
From the glamorous Bacchus Restaurant in South Bank comes Soleil Pool Bar. Bringing the outdoors in and the indoors out, Soleil has been designed to welcome and celebrate the sun all day and night long.
Though their official launch will be on Friday the 17th October, the team at Soleil are pouring cocktails from their carefully crafted list today. From punch to fine wine, beers from around the world and boutique offerings from breweries near and far, Soleil offers it all. 'The Soleil Collection' is what they most recommend though.
Soleil Bar Manager, John 'Jonte' Highton, is a wizard with creating tasty beverages. A finalist in current Barista, Waiter, Cocktail Maker awards, he's placed in the top ten from more than 2,000 nominations. Jonte reveals his top three favourite cocktails from the collection.
Passion is the Colour Red
This is a vibrant, bubbly and fresh take on an Italian classic. The addition of raspberry and rose sorbet makes it perfect for the hot Brisbane summer. Also available as a serves two option.
A Scarborough Fair
This drink incorporates a modern style gin, Gin Mare. The flavours used accentuate the botanicals and profile of the gin. I feel that there is always a spot on a good cocktail list for a well-balanced savoury cocktail.
The Black Barrel Inquisition
Personally, I love my rum. This drink packs a punch but it is so silky smooth that once you realise you have had two or three it's too late. I played around with the incorporation of a chef's smoking gun and this drink was definitely a labour of love. In addition to the theatricality, the smoke imparts a delicate flavour which only serves to improve the length and palate of the drink.
With fresh, seasonal and light dining options available, Soleil's menu focuses on sharing plates of goodies so you can taste everything the kitchen – and Jonte – has to offer.
