I am a bar manager at Capulet
in Fortitude Valley. Why do you do it?
I like looking after people and I like to party! Initially I had no qualifications and sought to turn a weekend job into a career! But I had a flair for it and here I am, toe to toe with some of the best in the world in my field! What do you love about the city you live in?
It's so picturesque, being such a loud personality for work needs to be balanced so I spend a lot of my time doing the Kansas City Shuffle! Find a quiet place to sit and learn the guitar, chill out, write and listen to the sounds of silence! Where did you go for your last holiday?
Here! Brisvegas! It was the perfect place to live... A holiday at home! I am having fun at the moment saving for my adventures to come and this is turning out to be an adventure unto itself, especially considering Capulet and the team I work with! What's your favourite item of clothing? Why?
An old hoody my best friend gave me! The hood makes my head look like my head! its actually perfect... but it's deteriorating to the point I think repairs are a must! Who knows what will happen with it!? What was your favourite TV show when you were a kid?
We didnt have a TV 'till I was about 13! We were a poor family! I spent a lot of time in the woods or using the roots of crops as grenades in mock battles, with huge hay bail forts! If you could travel back in time for a day, where would you go?
I believe in always going forward, but I do like to revisit places in my life! Those places that hold a special something in your heart and let you know that magic is real! It can't turn your frog face into a Prince Charming smile, and you don't always get the girl, but magic, it's out there! In fact, you should pop into Capulet... That's one of those places! If we were coming over to your place, what would you cook for us?
Traditional, contemporary, world, you name it, I'll give it a jolly good effort! I've worked at some beautiful five star establishments and learnt a lot of great tips from amazing chefs! It's evident in one of my projects, which I will be running next year. I will be turning food flavours to drink flavours and then laying on a small tapas style meal for five hours with drink accompaniment, essentially inverting the idea of your dinner/drink around!

The next one! Haha! I'm just kidding but there's a few! My favourites are the ones passed from my dad. 'In order to be old and wise, first you must be young and stupid!' He also used to say, 'It's ok being unlucky, but you've got to be unlucky and brilliant to make anything worth having!' I still don't know quite what it means but I like the depth! Tell us one thing about yourself that nobody else knows...
There's not a lot that people don't know, and if you don't know it, I want to keep that magic to myself! But I have a Forever Friends bear tattooed upon my buttocks! Him and me, we're forever friends! Are you happy with your work/life balance?
I really enjoy what I do! I get to hang out in the coolest new venue in Brisbane, work with an amazing team, make the craziest cocktails, be old fashioned and hospitable and then go home and have a few beers with my team, play my guitar and learn new things! It's the perfect balance, and I must take this opportunity to thank everyone that got me this far! My mum, my dad, my dog, my gerbil! Now... the Tale of the Cocktail, Oscars and NME Music awards! How do you define success?
Happiness! My grandad died poor and young, with a family he loved. He left a message to my dad's family and its message was perfect! 'Thanks for a great time!' If I look back and smile, I'll be chuffed! What's your spirit animal?
I'm a tiger! Hands down and no doubt about it! A big pussy cat with orange hair, black stripes, handsome, strong, charming and majestic, yet pretty solitary and modest! I like my quiet time!
