What do you do?
My role is creative drinks director at Prohibition in Brisbane, which is a really fancy title for 'I write cocktails menus, train the staff and make drinks'. At the end of the day I basically just make a whole bunch of Long Island iced-teas and espresso martinis.
Why do you do it?
No other job gives you the satisfaction you get after a 60-hour week sweating and stressing about every, little detail, and then seeing everything run smoothly. Also working behind a bar gives you a special access pass to people’s lives that no one else gets to see. Alcohol lowers everyone’s guard and as a result you get to be an intimate part of many different people lives for a short moment.
What do you love about the city you live in?
Brisbane is a very special place when it comes to hospitality. We’re very over represented when it comes to national and international bar competitions, everyone here is the best at what they do, but what I love the most about it, is how tight-knit this family is. If you work in this industry for like three months you’ll have a friend in every bar, which is also a huge perk when you take a girl out for drinks.
Where did you go for your last holiday?
Last holiday? I’m still waiting for my first. The biggest break I’ve had was about six months ago and it was for three days. I went to Byron and it was beautiful.
What's your favourite item of clothing?
Got to go with black jeans, very versatile. You can where black jeans with a suit jack or a singlet and you’ll still look good.
What was your favourite TV show when you were a kid?
Gotta be 'Dragon Ball Z', still is one of my favourites. I’ve learnt a lot of life lessons from that show, like working hard to reach your goals.
If you could travel back in time for a day, where would you go?
May 23, 1994. To go back and witness the miracle of a try at Lang Park for State of Origin Game 1. So euphoric.
If we were coming over to your place, what would you cook us?
Definitely buffalo wings. Before bartending I was a cook and I make the best buffalo wings in Brisbane, even Brisbane Good Guide said so.
What's the best lesson you've ever learned?
I keep thinking about the first whiskey training I attended. I learnt a whole bunch about the production of alcohol, but when the teacher got us to put a dash of water into this shot of Wild Turkey 101 and showed our group how it changed everything about it and why, it really opened my eyes to alcohol, and sparked a passion for me.

I actually really enjoy a Vodka-orange.
Are you happy with your work/ life balance?
Absolutely! I wouldn’t be doing this if I wasn’t. Life is definitely about balance between work and pleasure. So you should strive to get pleasure from working, right? A good life is about enjoying your work.
How do you define success?
Some will say happiness, some will say money. I don’t know if there is a definition for success, but if you’re doing your job well and you still wake up every day striving to crush your next goal, I’d say that’s the closest thing to success you get.
What's your spirit animal?
A meerkat. It’s always a meerkat. Not sure why exactly, but it’s a meerkat.
